Ingredients:
80 gm. egg white
1/2 tsp. cream of tartar
1/2 tsp. vanilla essence
50 gm. castor sugar
3/4 cup finely chopped walnuts
175 gm. melted chocolate

Method:
(1) Whisk egg white with cream of tartar till soft peak.
(2) White the beater is still running, add in vanilla essence and gradually pour in the sugar and whisk till stiff peak.
(3) Pour the nuts and melted chocolate over the egg white and gently fold with a spatula, trying not to deflate the egg white.
(4) Use a teapoon to scoop the mixture onto a baking tray , leaving 1″ between the cookies.
(5) Bake the cookies until it becomes shiny and cracked for about 12 mins. at 175C.
(6) The cookies should be firm on the outside amd still gooey inside when you press them.
(7) Cool on wire rack.

Chocolate Oat & Nut Cookies-Yochana

Ingredients:
125 gm. Butter
25 gm. shortening
90 gm. sugar
1/2 tsp. vanilla essence
1/4 tsp. Bicarbonate of Soda
20 gm. Corn Flour
200 gm. Self raising flour
25 gm. Quaker Oats
20 gm. wholemeal flour
10 gm. cocoa powder
1 no. egg
30 gm. Roasted almond nib
30 gm. chocolate chips

Method:
(1) Beat butter, shortening and castor sugar till soft.
(2) Add in egg and mix well. Add in vanilla essence.
(3) Then add in dry ingredients and mix together into a dough.
(4) Roll the dough into small balls and place onto baking tray. If you like, press down the ball with a fork to make an impression on the cookie.
(5) Bake at 160C for about 20 to 25 mins. or till cooked.
